The Kitchen Herbalist Classes - 2024

The Kitchen Herbalist Classes are Back at Four Winds Farm this Summer, led by Deborah Lee and Terri Hanlin. Each class will lead us on a unique journey of exploring with free-growing "weeds" and many common culinary herbs.

Enjoy 1 or more of 5 unique Saturday classes, starting June 1st and going until September 21st. Each class will be unique, regarding what herbs we collect, study, clean, sip, eat, and prepare for take-home use.  Class time is 9 am - 4 pm. A light lunch and beverages are provided. In addition to this:

each class will allow time for you to harvest a floral bouquet to take home; and of course, various herbal preparations. In addition to these hands-one activities, you can purchase from us, The Herbal Medicine-Makers Handbook, by James Green. 384 pages. It is a terrific textbook.

NOTE: Clubs and Groups are also welcome for one (or more) of the programs. (These can be booked by calling, or texting, Deborah at 217-257-1480)

All classes will be at Four Winds Farm. You will study and collect plants around the farm, especially in the Farmacy Herb Garden. Then harvest, clean and prepare various traditional herbal preparations for you to take home.  These will vary from class to class, offering a chance to learn various to use health-enhancing herbs.

June 1st:  Edible and Medicinal Weeds: Explore Dandelion, Plantain, Burdock, Elder, and a few more weeds that have been used and honored for centuries. We will discuss the plants that Pioneers brought from their country to the "New Land" and why. We will also collect a few culinary herbs; then: study, clean, and prepare several beverages, and also make a tincture and a wound salve.

June 22nd:  Medicinal Herbs: Learn about cultivating and using culinary herbs to support good health. This journey will take us into the Farmacy Herb Garden where we will learn about various medicinal/culinary super plants. We will also discuss drying and preserving herbs. We will make herbal tea, a tincture, and Elderberry tea, syrup or both, depending on what is in full bloom.

July 20th: Edible and Medicinal Flowers: We will collect and prepare various edible flowers for their beauty and nutrition, especially as a lovely garnish and addition to summer cuisine. We will also prepare an ointment and a herbal vinegar dressing. Then, explore the profound emotional aspects of flowers by studying and make 2 personal Flower Essence formulas. One from the US and 1 from Australia! Immerse yourself in emotional beauty!

August 24th: Transitioning your Garden and Herbs to Autumn: We will explore the gardens in late summer. Some new flower varieties will be blooming and many herbs will be thriving. We will collect plant roots and herbs for autumn health tincture combos including herbal poultices, bath salts, and fomentations.

September 21st: The Best Herbs and Pungent Plants for cold and flu season. (Extra take-home info sheets are included.) We will dig roots, make Master Formula, and a root tincture. We especially want to cover what herbs are helpful for colds, flu, Covid and other autumn health issues. Reiki Master, Terry Hanlin will discuss Reiki, including ways to stay healthy.

All classes include instruction, hand-home materials, "make and take" items, and herbal beverages.  A light lunch will be provided at each class.
